Cabbage steaks are the perfect plant-based alternative as a main dish at dinner or added to any meal as a side dish! They are so easy to make and packed with nutrients. Cabbage is a cruciferous vegetable just like cauliflower, kale, broccoli, brussels sprouts, and bok choy. It is a great source of fiber and is rich in antioxidants, vitamin C, and folate. It plays an important role in improving digestion with fiber and combating inflammation with antioxidants! It also stays fresh in the fridge for longer than most vegetables, a major win if you ask me! When roasted in the oven, it has a sweet and savory flavor and is both soft on the inside and crunchy on the outside. This recipe is so simple and won’t disappoint! 

 

INGREDIENTS

  • 1 head of cabbage

  • 4 tbsp avocado oil

  • 1 tsp garlic powder

  • Sea salt

  • Cracked pepper

 

DIRECTIONS

  • Preheat the oven to 400 degrees F

  • Slice the cabbage to 1/2 inch rounds

  • Lay on a baking sheet and coat each side with oil, garlic powder, salt, and pepper

  • Bake for ~40 minutes until edges are brown
