I threw together this green goddess marinade and was blown away by how delicious, refreshing, and versatile it was. I knew I had to remake it with the exact measurements to share with others! It is vegan and gluten-free and has become my go-to marinade on chicken, fish, turkey breast, on top of salad, as a dip with vegetables, or to top off any taco bowl! It is a great way to add a burst of flavor to any lean protein or veggie. This marinade is a perfect example of how to lower sodium intake in your food by using fresh herbs (cilantro or parsley) and ingredients like scallions and garlic in order to add amazing flavor without using the salt shaker! Additionally, garlic and herbs have many health benefits such as boosting immunity and working as an anti-inflammatory agent in the body. INGREDIENTS

1 jalapeño, with seeds

1/2 head of garlic

3 scallions
-
1 lime, juice and zest

1/2 cup cilantro

1/4 cup oil

Salt and pepper to taste

DIRECTIONS

In a food processor or blender mix together jalapeño with seeds, garlic, scallions, lime juice, lime zest, cilantro, oil, salt, and pepper.

Puree the ingredients until smooth

Use as a marinade for any fish or poultry, as a dip for veggies, or as a topping to any salad or grain bowl!
NOTES

The recipe makes about 1 cup of marinade

If you are not a fan of cilantro, feel free to sub out parsley! It’s just as delicious!

The spiciness of jalapeño really varies for each pepper and most of the spice factor is found in the seeds. If you like your dishes with a spicy kick, keep the seeds in the jalapeño when pureeing. If spicy isn’t your thing, just take out the seeds before pureeing!
