Beets are a non starchy root vegetable that are packed with nutrients such as folate, manganese, potassium, iron, and vitamin C. They are so naturally beautiful with their dark purple appearance and offer a sweet, yet savory flavor. The color found in beets is thanks to a phytonutrient called betalains, which has antioxidant and anti-inflammatory properties. You can eat beets out of a can, pickled, freshly shredded, or roasted. They are delicious as a side dish or in a salad! They pair perfectly with goat cheese, arugula, and pine nuts. Here’s a simple roasted beet recipe that is my favorite :)

INGREDIENTS

4 fresh beets
-
1 tbsp avocado oil
-
1 tsp salt
-
Dash of pepper
-
Optional: yellow onion, pine nuts, goat cheese
DIRECTIONS

Preheat the oven to 425 degrees F

Peel and rinse the beets
-
Dice the beets into 1 inch cubes and toss with oil, salt, and pepper
-
Line beets on a baking sheet and bake for ~25 minutes, mixed halfway
-
Remove when edges become slightly crispy
