Beets are a non starchy root vegetable that are packed with nutrients such as folate, manganese, potassium, iron, and vitamin C. They are so naturally beautiful with their dark purple appearance and offer a sweet, yet savory flavor. The color found in beets is thanks to a phytonutrient called betalains, which has antioxidant and anti-inflammatory properties. You can eat beets out of a can, pickled, freshly shredded, or roasted. They are delicious as a side dish or in a salad! They pair perfectly with goat cheese, arugula, and pine nuts. Here’s a simple roasted beet recipe that is my favorite :)

 

INGREDIENTS

  • 4 fresh beets

  • 1 tbsp avocado oil

  • 1 tsp salt

  • Dash of pepper

  • Optional: yellow onion, pine nuts, goat cheese

 

DIRECTIONS

  • Preheat the oven to 425 degrees F

  • Peel and rinse the beets

  • Dice the beets into 1 inch cubes and toss with oil, salt, and pepper

  • Line beets on a baking sheet and bake for ~25 minutes, mixed halfway

  • Remove when edges become slightly crispy
