These roasted chickpeas make up the perfect snack! Chickpeas are  legumes, a good source of plant based protein, complex carbohydrates, and fiber! They have a lower glycemic index, meaning they do not spike your blood sugar and are a good choice for those with diabetes or anyone looking to manage their weight. Canned chickpeas are budget friendly and when roasted, they get super crunchy like a chip! It’s a great snack while on-the-go, in your house, or can be a delicious topping to any salad! Here’s how I like to spice them up!

 

INGREDIENTS

  • 1 can of chickpeas (15 oz can)

  • 1 tbsp avocado oil

  • 1/8 tsp salt

  • 1/8 tsp pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp paprika

DIRECTIONS

  • Preheat oven to 425 degrees F

  • Open can of chickpeas, rinse, and let dry for a crispier roast

  • In a medium sized bowl mix together oil, salt, pepper, garlic powder, and paprika

  • Once chickpeas are dried, add to bowl and mix all together

  • Lay chickpeas on sheet pan and roast for ~20 minutes until desired crunchiness

Notes on the Recipe: ​

You can spice these chickpeas up anyway you’d like! Try adding cayenne pepper or chili flakes for a spicier snack
