Zaatar is a delicious savory Mediterranean spice that can be any mixture of sesame seeds, oregano, dried sumac, coriander, marjoram, and other spices. Zaatar is delicious on many dishes such as pita bread, Israeli salad, or as a great way to spice up cauliflower. You can find zaatar in some supermarkets or you can purchase it on amazon. Cauliflower is a non starchy cruciferous vegetable filled with fiber, Vitamin C, and B-vitamins. Feel free to double up on this cauliflower side dish to keep you feeling fuller and satisfied with the delicious zaatar flavoring :)

 

 

INGREDIENTS

  • 1 head of cauliflower, sliced thick

  • 2 tbsp olive oil

  • 1 tsp zaatar spice

  • 1 tbsp dried parsley flakes

  • Cracked pepper

  • Sea salt

DIRECTIONS

  • Preheat oven to 450 degrees F

  • Slice cauliflower into thick slices

  • Brush both sides with olive oil and sprinkle with zaatar spice, parsley flakes, salt, and pepper

  • Lay on a baking sheet and bake for ~20 minutes

​

NOTES ON THE RECIPE

  • You can also cut the cauliflower into florets and enjoy it that way! I find the slides get more crunchy and I like the way they look
